The wide area around Lake Trasimeno has always been excellent for vegetable growing, thanks to the mild climate and loose soil. Some of the traditional growing areas have been lost over time, however. Thanks to the efforts of Slow Food, the Trasimeno bean is now undergoing something of a revival. Also known as "lake rice" thanks to its small size and whitish colour, or "eye bean" because of the little black pupil-shaped markings, the Trasimeno bean is usually boiled, and dressed with a drizzle of extra-virgin olive oil.
