Typical dish of the Piediluco tradition, prawns in green sauce are a simple yet highly appreciated starter thanks to their fresh and aromatic flavour.
Bring a large amount of lightly salted water to the boil. Cook the prawns for about 5–6 minutes, until they turn pink. Drain and leave them to cool. Meanwhile, prepare the green sauce: blend, or crush in a mortar, the parsley with the anchovies, garlic, vinegar, olive oil, salt and pepper until you obtain a smooth sauce. Use it to season the prawns.
