Salone Conserva 2025
From 11 to 13 October 2025, in Spoleto, the Chiostro San Nicolò will host the new edition of Conserva – The Art of Food Preservation Fair. After the success of its first edition, the event returns with a program that combines cultural insights, educational moments and hands-on experiences. In the past, preservation meant ensuring survival during difficult times through practices such as curing, preserving in oil or tomato canning; today it represents a way to reduce waste, optimize consumption and enhance raw materials. “Conserva” offers the opportunity to rediscover and share these techniques, bringing together tradition and innovation, from home cooking to the new frontiers of technology and scientific research.
The 2025 edition expands its focus with special attention to the preservation of Spoleto’s artistic and natural heritage, through guided tours, special openings and meetings with restoration and conservation experts. The theme of preservation thus extends across multiple fields, from food culture to heritage protection, encouraging the active participation of the public, professionals and enthusiasts.
The program includes a market exhibition with tastings, DIY workshops, practical labs on fermentation and dairy processing, children’s activities, as well as talks with specialists on food safety and sustainability. Also noteworthy is the exhibition “ConservArte”, featuring the complete series of Campbell’s Soup screenprints by Andy Warhol, an icon of international Pop Art.
The event also spreads into the city with initiatives curated by Maggioli Cultura, guiding visitors through preservation techniques from ancient Rome to the Baroque period. Finally, the conference “Conserva Azione” will reflect on the relationship between food, time and culture, while looking ahead to the future of preservation practices.
