Preparation

Start by pouring the olive oil into a pan and gently browning the unpeeled garlic clove. Remove the garlic and let the oil cool slightly. Once lukewarm, add the grated truffle, stir gently and leave to infuse for a few minutes. Meanwhile, crack the eggs into a bowl and beat them. Remove the truffle from the oil and set it aside. Pour the infused oil back into the pan. Once hot, add the beaten eggs and cook for a few minutes over low heat, stirring gently.

Finally, add the truffle and finish cooking: the scrambled eggs should be soft and creamy. Plate up and top with a few shavings of fresh truffle, allowing the heat to release its full aroma.

Serve piping hot, ideally with toasted bread or croutons for a delightful contrast in texture.
