Dessert traditionnel de la période des vacances d'hiver (de début novembre jusqu'au Carnaval), préparé spécialement à Noël, la rocciata est une recette typique de Foligno, Assise et Spello.
Sa forme en spirale rappelle celle d'un serpent enroulé sur lui-même, dont la couleur rouge est donnée par les alchermes. À l'intérieur de la pâte, une riche garniture de pommes cuites avec des noix, des amandes, des pignons de pin, des figues sèches, des raisins secs et du chocolat.
