The Duca di Orvieto's historic cuisine is the result of patient research into recipes from the Orvieto area and neighbouring towns that are destined to disappear because they have been swept away by the hectic pace of everyday life, but are still relevant in today's taste. It is therefore thanks to all the women who have spent their lives among the cookers that we are now able to put 'our culture on the plate' and keep traditions alive. There was a close link between the various phases of the religious, agricultural or personal calendar, but the main ingredients remained patience, creativity and the availability of the land and above all 'so much time that cost nothing! We placed particular emphasis on peasant cuisine, but we also offer recipes from aristocratic and bourgeois traditions, even if, however, there has never been a great divide between poor and rich cuisine in our religion. We would like to thank the families of Orvieto, Torre San Severo, Allerona and San Venanzo who have allowed us to execute their best dishes, and it is also thanks to them that today we can offer unique dishes faithful to tradition on our menu.
