The patronal feast of Castel Giorgio takes place every year with a series of events that celebrate the patron saint San Pancrazio Martyr and the ancient tradition of May. The festivities begin on the afternoon of May 11 with the transport of the May, a tree that is carried in procession through the streets of the town. The historical procession, with figures in seventeenth-century costume, accompanies the May to the sound of drums. Once in front of the Palazzo Vescovile, the tree is hoisted by the "maggiajoli" with the aid of forks and ropes, in a rite called "arzata".

The following day, after the religious procession in honor of San Pancrazio, the "rancata del Maggio" takes place. A team of men challenges the tree, trying to climb it with bare hands to the top.

During the event, the four districts of the town stage the Quadri di San Pancrazio, living representations of the life of the martyr. On May 12, the traditional Infiorata also takes place, with carpets of flowers that adorn the route of the religious procession. The festivities also include musical entertainment and the traditional Tombola in Piazza.
