Accreditation of new types of restaurants

Restaurants seeking accreditation on the Umbriatourism portal must meet no less than three of the following criteria:

  1. offer traditional local gastronomic recipes

  2. use typical local products

  3. have a wine list with a significant presence of local labels 

  4. present a list or selection of Umbrian extra virgin olive oils

Or, alternatively

  1. meet at least two of the criteria listed above and at least two of the following requirements:

  2. have a list of Umbrian mineral waters

  3. predominantly use in the preparation of dishes products certified organic products prevalent use (equal to 50%) of 0 km cd products in the preparation of the menu prevalent use (equal to 50%) of quality branded products of agri-food products (IGP, DOC, DOP etc.) of the Umbria Region

  4. set up special retail corners for typical local products

  5. adopt sustainable procedures in the management of the restaurant aimed at reducing negative impacts on the environment such as:

  • for food and beverages --> priority to fair-trade products or transfer of leftover food to appropriate bodies, thus adopting policies against food wast;
  • for waste --> priority to reduction, particularly of the organic fraction, in addition to proper sorting of recyclable material;
  • for energy --> priority to energy saving by also using renewable sources (e.g. photovoltaic panels);

  • for non-food purchases > priority to environmentally friendly products and recyclable packaging or packaging made from recycled material for take-away.

Or, in the further alternative

to have been awarded at least one Michelin star.
