Trota al tartufo nero
The first thing you need to do is clean the trout and wash them. Once you've dried them, boil them in hot water. Carefully remove the scales, bones and fins. Place the fish fillets one next to the other on a serving plate. In the meantime, crush the truffles – once you've cleaned them – in a mortar and add the vinegar, garlic, and lemon juice. Mix the ingredients together until you obtain a well-amalgamated sauce. Heat it with some extra-virgin olive oil. Then pour it onto the trout and serve up.
