Smulicata is a "poor" dish of Umbrian cuisine and very easy to make. It is a dish with winter vegetables, but also good in autumn, with the appropriate vegetables. In the past it was in fact prepared with any available vegetable, sauteed with garlic and enriched with stale bread.
It is ideal as an accompaniment for meat, but also - in a vegetarian version - for torta al testo.
Clean the chard and shred the ribs. Wash everything well, pour the beets into a saucepan, salt, cover with water and let them boil for about ten minutes. Drain them and run them under cold water to stop them from cooking.
In a large skillet, wilt the peeled and slightly crushed garlic cloves in oil. Once the oil is hot, add the chard and allow it to take on flavor.
Sprinkle with previously crushed stale bread and simmer for about 10 minutes. Adjust the salt and serve.
