Smulicata (Swiss chard, Umbrian-style)


800 g Swiss chard
2 cloves of garlic
2 tbsp stale bread, finely crumbled
Extra-virgin olive oil

Clean and finely chop the chard. Wash thoroughly, place the chard in a flameproof casserole dish, add salt, cover with water and leave to simmer for about 10 minutes.
Drain and rinse under cold water to stop the cooking process. In a large pan, gently crush the peeled garlic cloves and leave to soften in the oil. Then add the chard and leave to simmer, stirring with a wooden spoon.
Sprinkle with breadcrumbs and leave to cook over a low heat for about 5 minutes. Season and serve
